Maximize Your Garden Surplus: Tips for Freezing and Using Your Produce

The fall is a busy time around here. I'm sharing one of my favorite surplus hacks.

Diced peppers and onions for a quick grab out of the freezer.

I use a dicer to make the job quick. Once everything is chopped up I put 1 cup of veggies into a sandwich bag. This is the perfect amount for the large muffin tins. (not your average muffin size - but you could do a 1/2 cup veggies and use a regular muffin tin.)

Grab the baggie of vegetables and twist the end of the bag to squeeze out as much air as possible.

Place the bags with the twisted size down.

Pop the muffin tin into the freezer over night to fully freeze the vegetables. Then remove them and place the individual bags into a zipper bag or other container. Store in your freezer until needed.

You can now quickly grab diced onions and peppers. They usually thaw quickly on the counter as I prep the other ingredients for whatever dish I am making.

Some of my favorite things to do with these quick prep veggies are:

  • chicken or steak fajitas

  • chili

  • Potato hash with sausage

  • breakfast burritos

  • omelets
